Gluten free pizza



As a newly discovered coeliac I know exactly what I'm missing. So far I have managed to deal with the cravings pretty well. Easter's full of lovely gluten free goodies! One thing I have REALLY miss is pizza. My dad spent most of his childhood in Italy so he knows his pizza and one of my favourite dinners was our home made pizza. It had that perfect crispy thin base and, possibly the best bit, only took an hour for the dough to rise so you wouldn't have to wait hours to take that first bite.

While in Tesco recently, I spotted the ds gluten free pizza bases. Normally I avoid the gluten free section. Apart from kelkin gluten free porridge which I couldn't get through the day without, I have a pretty intense love for porridge. I don't know why I normally avoid it, although I think the taste of coeliac bread probably has something to do with it.



In taking it out of the packet, I was already a little disappointed. Its really small and not that thin. I think I was expecting to be able to roll it out a bit and for it to be a bit more... dough like? It was almost as if it had already been half cooked.I decided not to judge it before I had even tried it and got to putting on the toppings.




First I covered it in kelkins' gluten free pasta sauce which I also bought in Tesco and then topped it with slices of mozzarella, sweetcorn, chilli flakes, basil and pepper mmmmm...





It says on the box to put it in the oven for 15 minutes but I found it was starting to burn after about 10 so I took it out. My first thought was why is this so hard to cut?! and after battling with a pizza slicer and the crust for a while, I eventually sat down in front of the new episode of the walking dead and took a bite.




It was actually pretty ok! no competition for a proper Italian pizza and I don't think it could ever have that brilliant texture, you know when the pizza slice is sort of... floppy... in a good way? But it was definitely better than I expected, just adding even more to my confusion surrounding that bazaar after taste you get eating gluten free bread.


This is definitely something I'll get again and if you too are struggling with the longing for a pizza, lower your standards just a little and go for it!
